These simple and flavorful potatoes forego the onion/garlic/ginger/tomato base used in a lot of Indian dishes for a simple base that make these super versatile as a side dish, a snack with a drink or tea or even as a delicious accompaniment to breakfast.
You'll Need:
2 tbsp. olive oil
2 lbs. fingerling potatoes, scrubbed and cut in half
1/4 tsp. black pepper
2 tsp. Down the Road Spice Co. Kitchen Queen Masala
Lemon and chopped cilantro, optional
Salt for seasoning, optional
Preparation:
- Heat the olive oil in a heavy-bottomed pan on medium. Once the oil is hot, add potatoes and stir to coat.
- Cover the pan and let the potatoes cook for 20-25 minutes or until tender, stirring frequently.
- Turn the heat to low and add black pepper and Kitchen Queen Masala. Stir to coat and then remove from heat.
- Finish with a fresh squeeze of lemon juice and some fresh chopped cilantro. Season with salt as needed to taste.
