Sukha Tava Aloo (Pan Roasted Potatoes) with Kitchen Queen

These simple and flavorful potatoes forego the onion/garlic/ginger/tomato base used in a lot of Indian dishes for a simple base that make these super versatile as a side dish, a snack with a drink or tea or even as a delicious accompaniment to breakfast. 

You'll Need:

2 tbsp. olive oil 

2 lbs. fingerling potatoes, scrubbed and cut in half 

1/4 tsp. black pepper 

2 tsp. Down the Road Spice Co. Kitchen Queen Masala 

Lemon and chopped cilantro, optional

Salt for seasoning, optional

Preparation: 

  1. Heat the olive oil in a heavy-bottomed pan on medium. Once the oil is hot, add potatoes and stir to coat. 
  2. Cover the pan and let the potatoes cook for 20-25 minutes or until tender, stirring frequently. 
  3. Turn the heat to low and add black pepper and Kitchen Queen Masala. Stir to coat and then remove from heat. 
  4. Finish with a fresh squeeze of lemon juice and some fresh chopped cilantro. Season with salt as needed to taste.
  5. Enjoy!
